There should be six lunches here, but we've had a round of sickness go through our house this week. And actually, only three of the four people that I did make lunches for ended up even going skiing. So the ones that went had one extra for a friend.

For the ski lunches I made toasted sandwiches.  Three of them got chicken melts. Think tuna melt, but chicken instead of tuna. I thought this sounded like a pretty good idea, but they actually tasted even better than I expected. This is definitely something I'll be making again. I took one poached chicken breast and chopped it up into pretty small pieces, and then I mixed it with a couple tablespoons of mayonnaise, a couple big handfuls of shredded cheese, and a couple dashes of celery salt. Then I piled it on the bread and grilled the sandwiches. One big chicken breast was enough for four sandwiches (three to go, and one for me), plus a little extra for the cook to snack on. 

The fourth lunch I packed had just a grilled cheese sandwich, because she doesn't eat chicken. After they cooled, I sliced the sandwiches in half and put them in the lunchbox. On top of each sandwich I laid a piece of patty paper, and some sliced veggies on top of that. On the side they all had cheese crackers, some chocolate covered nuts, and two had tomatoes and two had almonds. 

I toasted the sandwiches with my griddler - I got it for my birthday last year and I love it. It's perfect for making paninis, but I also use it for all kinds of other grilled things. 

The lunches were packed the night before and they ate all the sandwiches cold, which never seems to bother anyone in my family.
