Friday sandwiches + Friday pizza all in one!  I've been wanting to make this for a while, and a rainy Friday seemed like the perfect time.  I did not make this lunch ahead, I just made it this morning.  I'm not sure how well it would keep overnight with the pizza sauce on this very soft bread.  Maybe on a thicker bread I think it would do fine, but this very soft whole wheat bread was all I had and I didn't want to take my chances.  But they were easy to make and came together really fast, so making these in the morning was really no big deal. 

Leftover pizza hardly needs a reason.  When we make or order pizza, we always get extra.  I think leftover pizza should be its own food group. Having leftover pizza just makes Monday seem so much better. Well, for me anyway.  It's the easiest lunch to pack. 

One word: Easy. Monday needs an easy lunch, and these little guys fit the bill.  If you haven't made these yet, and your people like pizza - then what are you waiting for?  Make a double batch, it takes about 5 minutes, pack some in lunch, have some for dinner, stick half in the freezer for a couple of lunches down the road. You will not regret it.  If you have them frozen, just put them straight from the freezer to the lunchbox the night before (you are packing the night before, right?).  They will thaw overnight in the fridge and be perfect at room temp for lunch.
