School Lunch Day 91: Taco Pizza!

Tacos + Pizza = a dinner the whole family will love, plus awesome leftovers for school lunch packing!

So I made these taco pizzas for dinner on Taco Tuesday. They are so easy to make!

I used a raw Indian flatbread dough - called Roti Chapati - I get it in the refrigerator section at Costco. They are basically like a flour tortilla, except with whole wheat flour and a little thicker. Normally you just cook these on a hot pan, but I used them in place of pizza dough. You can totally do this with just a regular flour tortilla though. To make the pizzas, just lay out your dough (or tortilla), spread with enchilada sauce (I used my homemade sauce), then top with cheese and whatever else you like. I topped ours with just browned ground beef. Then you bake just like a pizza - if you have a pizza stone do it on that, otherwise put them on a cookie sheet lined with parchment paper. 450 degrees for 8-10 minutes or until the crust in brown and the cheese is bubbly. 

For dinner, I served the pizzas with lots of options for toppings on the side - avocados, tomatoes, green onions, salsa, sour cream, etc. 

For the lunches, I gave the pizza to the kids without toppings, just to keep it simpler and less messy. One child has black beans and chips because she didn't like the pizza when we had it for dinner on Tuesday. On the side they have sour cream for dipping (plus one has mashed avocado), goldfish crackers, and either apples or an orange.

And I mentioned my picky eater. Yeah, we're working on it. But I just found out about a great new book that I think is a great resource if you have a picky eater. I'm loving all the great tips she provides.
