A grown up lunch for a field trip day

Grandma and I were going along for the second grade field trip, so I packed a more grown up lunch to go for us. We have two salads for lunch - a chicken salad and a kale salad, with some edamame rice crackers on the side.

For the chicken salad, I started with my simple poached chicken breast. I just shredded up a chicken breast with my fingers, stirred in a couple tablespoons of mayonnaise, about a teaspoon of curry powder, and dash of salt, and I put a few sliced cucumbers on top. 

The kale salad is even easier. This is just one bunch of kale, chopped up, and tossed with a heaping tablespoon of pesto, and a generous squirt of Bragg's Aminos. I mixed it all together really well so all the kale was coated, and laid a few tomatoes on top. 

The salads are both packed in containers that we get when we order takeout from a restaurant - styrofoam is illegal in Seattle, so we get these reusable plastic containers instead.
