On the list of random, but very important, pieces of cooking advice I have for you, very near the top is this:

Always cook extra chicken.  

Leftover chicken is practically what makes my world go 'round.  If I have cooked chicken in my fridge, then I think everything is going to be ok.  I can make a meal in 5 minutes or less.

This was my lunch today: a super simple and lightning fast pesto chicken salad.  This is one leftover chicken breast, cut in cubes and mixed with a heaping tablespoon of mayonnaise and a heaping tablespoon of pesto (the big container from Costco). That is all.  Just mixed well together and laid on top of some shredded lettuce.  Packed with a few cherry tomatoes and a cute little pack of fresh mozzarella cheese (also from Costco) on the side, and I had a lunch packed in less than 5 minutes that was making my mouth water.
